Rasquera goat
This breed has its last stronghold in the south of Tarragona, and takes the name Rasquera from the municipality where it has been best preserved. It is probably the Celtiberian white goat population living closest to the sea.
It is highly valued for the compact texture and intense flavour of the kid meat, and for the quality of its crestons, the castrated kids fattened for 12-18 months. Its meat is usually eaten in escabetx (pickled).
Production is quite seasonal: it is concentrated in autumn so that the kids can be sold at Christmas.
